LOADED TOT CUPS

Ingredients

1, 20 ounce bag tater tots

1 cup horseradish cheddar cheese, shredded

6 slices of bacon, cooked crisp and chopped

½ cup sour cream

4 scallions, chopped

Instructions

Preheat oven to 425 degrees.  Coat a regular size muffin pan with non-stick spray.

Place 6 tots in each muffin cup and bake for 10 minutes in the preheated oven.  Using a glass or shot glass that will fit into the muffin cups, press the tots down into the cup created a potato ‘cup’ crust.  You may need to wipe the bottom of the glass periodically to remove any potato that sticks to the bottom.

Fill each tot with 1 ½ – 2 tablespoons of the shredded cheese.  Place back in the oven and cook for another 4-5 minutes until the cheese is melted and the tot crust is golden brown.

Using a spoon, remove the tot bites to a platter and top evenly with the bacon.  Place a small dollop of the sour cream on top and sprinkle the scallions evenly over each.

Serve hot!
