SPICY SHRIMP-CHORIZO CROSTINI
½ pound raw shrimp, peeled and deveined
¼ cup cured chorizo sausage, finely chopped
¾ cup pepper jack cheese, shredded on the large holes of a box grater
¼ cup Hellmann’s Spicy Dipping Sauce
2/3 cup scallions, divided
1 loaf French baguette
Preheat oven to 400 degrees.
Rough chop the shrimp into ¼ – ½” dice and place in a small bowl. Add the sausage, shredded cheese, Hellmann’s Spicy Dipping Sauce, and half of the scallions to the bowl. Mix until well combined.
Cut the baguette into ½” thick slices and place them on a foil-lined rimmed baking sheet. Spread the shrimp mixture over the top of each slice to generously cover, pressing to adhere to the bread.
Bake for 10 minutes until hot and bubbly. Sprinkle with the remaining scallions and serve hot.
Makes 20-24 delicious crostini!
