CRISPY PARMESAN CAULIFLOWER

Ingredients

1 large head cauliflower

½ cup olive oil, divided

2 cloves garlic, minced

¾ teaspoon salt

½ teaspoon black pepper

1 teaspoon Dish off the Block Ciao Bella Italian Spice Blend

¾ cup freshly grated parmesan cheese

The Dipping Sauce: (Optional)

½ cup sour cream

2 tablespoons mayonnaise

1 ½ teaspoons grainy Dijon mustard

1 ½ tablespoons prepared horseradish

Instructions

Preheat oven to 425 degrees and line a baking sheet with parchment paper.   Place the parmesan cheese in a pie plate or shallow baking dish.

Cut the leaves and bottom of the stem off the base of the cauliflower.  Cut the head into 1-1 ½” steaks. Place the steaks on the baking sheet in a single layer.

Combine the olive oil, garlic, salt, pepper, and Italian seasoning in a small bowl and whisk to combine. Liberally brush the seasoned oil all over the steaks on both sides.  Dip one side each steak into the grated parmesan cheese and place it back on the baking sheet, cheese-side-down.

Bake for 30-35 minutes until they are golden brown and tender all over when pierced with a fork.  Total cook time will depend on the thickness of the steaks.

While the cauliflower cooks, combine all of the sauce ingredients and whisk until smooth.

Serve hot with horseradish dipping sauce on the side.
