TJ’S CHILE LIME SHRIMP, MANGO, AND AVOCADO SALAD
Ingredients
1 pound Trader Joe’s frozen Wild Raw Argentinian Red Shrimp, thawed
3 tablespoons Trader Joe’s Chile Lime Seasoning Blend, divided
7 tablespoons Trader Joe’s olive oil, divided
2 Trader Joe’s fresh ripe mangoes, chopped into ½” cubes
2 Trader Joe’s fresh ripe avocados, chopped into ½” cubes
½ cup Trader Joe’s red onion, finely chopped
½ cup Trader Joe’s fresh cilantro leaves, chopped (plus more for garnish)
Juice of 2 Trader Joe’s limes, about ¼ cup
½ teaspoon Trader Joe’s salt
Instructions
Pat the defrosted shrimp dry with paper towels. Place them in a medium size bowl and add 1 ½ tablespoons of the TJ’s Chile Lime Seasoning Blend. Toss with tongs until all of the shrimp are well coated in the seasoning.
Heat 3 tablespoons of the olive oil in a large skillet over medium high heat. When the oil is very hot, add the shrimp in a single layer. Sear on the first side without moving them for 2 minutes. Flip and sear for 1 minute on the second side until just cooked through. Remove to a bowl and let cool completely (I like to refrigerate so the shrimp are cold when I make the salad.
To make the salad, combine the shrimp, mango, avocado, red onion, cilantro, lime juice, salt, 3 more tablespoons of olive oil, and 2 teaspoons of the Chile Lime Seasoning in a large bowl and gently toss until everything is well combined and coated.
Place the salad in a large serving dish or individual bowls. Sprinkle more of the Chile Lime Seasoning over the top and garnish with more cilantro leaves and lime wedges. DEVOUR!!
