PARMESAN BACON BROILED OYSTERS
12-15 medium to large oysters
⅓ cup Hellmann’s Real Mayonnaise
2 tablespoons fresh lemon juice, divided
⅓ cup + 2 tablespoons grated parmesan cheese, divided
4 slices of bacon, cooked crisp and finely chopped (about ⅓ cup)
3 tablespoons chives, divided
Preheat broiler to high.
Shuck the oysters and gently scrape under the bellies to loosen them from the shell but leave them and their juices on the shell.
Combine the mayo, lemon juice, parmesan cheese, bacon, and half of the chives in a small bowl and whisk to combine.
Place about a tablespoon of the mayo mixture on top of each oyster to cover. Place them on a foil-lined baking sheet and place under the broiler, about 5-6 inches and broil for 1-2 minutes until golden brown and bubbly. Watch them closely so they don’t burn. The timing will depend on the heat of your broiler.
Sprinkle the remaining chives over the tops and drizzle with the remaining lemon juice. Let cool slightly and then devour!
