3 large, very ripe bananas
¼ cup melted butter
2 teaspoon vanilla
1 cup sugar
1 ½ cups flour
1 teaspoon baking soda
1 teaspoon salt
Optional-1 cup chopped walnuts or chocolate chips
Mash bananas with a fork.
Mix in butter, vanilla, and egg with smashed bananas.
Stir in sugar until batter reaches an even consistency.
Mix dry ingredients in a separate bowl and add to the banana mixture, stirring until all dry ingredients are “absorbed” into the bananas.
Pour batter into muffin tins sprayed with non-stick spray and fill almost to the top.
Place into a 350°, preheated oven and bake for 20-25 minutes or until tester comes out clean.
Makes 12-14 muffins depending on the size of your bananas! YUM!!!
