BAKED PRAWN SCAMPI

Ingredients

1 ½-2 pounds large or jumbo prawns or shrimp, head and shell on*

6 tablespoons butter

6 tablespoons olive oil

¼ cup garlic, chopped

½ teaspoon salt

½ teaspoon red pepper flakes

½ teaspoon Dish off the Block Ciao Bella Italian Spice Blend

½ cup fresh parsley, chopped

¼ cup fresh dill, chopped

2 tablespoons lemon juice

1 loaf ciabatta or French bread, brushed with olive oil and lightly toasted

Instructions

Preheat oven to 400 degrees.

Place the prawns/shrimp in a pie plate or shallow baking dish ‘spooning’ in concentric circles.

Combine the butter, olive oil, garlic, salt, red pepper flakes, and Italian seasoning in a medium sauce pan and cook, stirring for 2-3 minutes until the garlic is soft and fragrant.  Remove from heat and stir in the parsley, dill, and lemon juice.

Pour this garlic and herb butter evenly over the prawns/shrimps.  Bake for 12-15 minutes until the prawns/shrimp are pink, curled and cooked through.

Serve this incredible scampi with toasted bread on the side for sopping up that amazing garlicky shrimp butter. If you use peeled shrimp, this dish is also amazing over pasta with a sprinkle of parmesan cheese.

*This dish can also be made with regular or smaller shrimp, peeled and deveined, but cooking time will be considerably shorter depending on the size of the shrimp and if they have no shell.
