BACON AND POTATO PAPRIKA BITES

Ingredients

8 slices bacon, cut into thirds

24 baby potatoes (bite size – about 1 pound)

1 teaspoon paprika

½ cup sour cream

Chopped chives or parsley for garnish

Instructions

Preheat oven to 425 degrees.

Wrap each potato tightly with a piece of bacon pressing the ends together to adhere to the potato.  Place them on a foil-lined baking sheet, seam-side down, and sprinkle with the paprika.  Bake for 25-35 minutes until the bacon is crisp and the potatoes are tender when pierced with a toothpick.

Serve on a platter with sour cream and toothpicks on the side.  Garnish with chives or parsley.
