MAPLE SOY SALMON
Marinade:
¾ cup beer
½ cup maple syrup
½ cup soy sauce
¼ cup rice vinegar
¼ cup brown sugar
¼ cup honey
¼ teaspoon black pepper
3 garlic cloves, minced
1½ - 2 pounds salmon filet
Whisk all marinade ingredients together in a medium size bowl. Pour over salmon in a shallow baking dish and turn to coat. Let marinade in the refrigerator for 1-3 hours.
Preheat oven to 375°. Cover a baking sheet with tinfoil, shiny side up. Spray with cooking spray.
Remove fish from marinade and pat lightly with a paper towel to remove any excess liquid. Place salmon on the baking sheet, skin side down, and bake for 10-15 minutes until it flakes in the middle. The flesh should be slightly translucent and very moist. Place under the broiler until top of fish is lightly browned, about 1 minute. Watch it closely so it doesn't burn!!
I created this marinade for some fresh Northwest salmon I bought at the famous Pike Place Market in Seattle, WA in 1995 while on a business trip. It’s rich, sweet flavor has received rave reviews ever since.
