CURRIED CHICKEN AND APPLE SALAD

CURRIED CHICKEN AND APPLE SALAD

3 cups chicken breast, cooked and shredded into bite size pieces (packed cups)

1 cup fresh celery, finely diced including leaves

1 ½ cups Hellman’s Light mayo

3 tsp. curry powder

2 large, firm apples chopped into ½” dice (skin on – I like Delicious or Honey Crisp)

1 cup seedless grapes, sliced in half

½ tsp. salt

½ tsp. black pepper

1 tsp. Dijon mustard

1 Tbs. brown sugar

Juice of one lemon

 

Mix all ingredients together in a large bowl. Toss well to combine and serve on mixed greens.
