TRADER JOE’S LOBSTER BISQUE PASTA

Ingredients

3 tablespoons olive oil

1 small sweet onion, chopped

6 garlic cloves, chopped

1 pint cherry or grape tomatoes, cut in half

½ teaspoon red pepper flakes

1 teaspoon salt

2, 12 ounce packages Trader Joe’s frozen langoustines, thawed

1, 16 ounce container Trader Joe’s lobster bisque

1 cup grated parmesan cheese, divided (plus more for sprinkling)

1 pound pasta (I used pappardelle for these photos, but use your favorite shape), cooked 3 minutes before al dente

4 tablespoons cold butter, cut into pats

½ cup fresh parsley, chopped (plus more for garnish)

Instructions

Cook your pasta in boiling water that has been liberally salted.

Heat the olive oil in a large deep skillet and cook the onions and garlic for 2-3 minutes until soft and fragrant.  Add the tomatoes, red pepper flakes and salt to the pan and cook for another 2-3 minutes, stirring frequently.

Add the langoustines to the pan and cook, stirring, until any liquid has evaporated.  Add the bisque and ½ cup of the parmesan to the pan and cook, stirring, until the pasta is 2-3 minutes short of al dente (it will finish cooking in the sauce).  Add the pasta to the pan and toss, toss, toss.

Add the 4 pats of butter, the remaining ½ cup of parmesan, and ½ cup of parsley to the pan and continue to toss, toss, toss until the sauce coats the pasta and is glossy and rich.

Serve the pasta hot in bowls with more parmesan on the side for sprinkling.
