THAI SALMON PATTIES WITH JASMINE RICE AND BROCCOLINI

Ingredients

The Sauce:

1 tablespoon soy sauce

2 tablespoons rice wine

2 teaspoons fish sauce

½ teaspoon sesame oil

1 teaspoon mirin

2 teaspoons brown sugar

1 tablespoon Hellmann’s Light Mayonnaise

 

The Patties:

3 large cloves garlic

1 jalapeño, rough chopped

1“ piece ginger root, peeled and cut into slices

3 tablespoons brown sugar

1 teaspoon Dish off the Block Ragin’ Cajun Spice Blend

2 teaspoons fish sauce

2 tablespoons fresh lime juice

1 tablespoon oyster sauce

1-pound salmon filet, skinned and cut into large chunks

⅓ cup cilantro

1 egg

1 cup red bell pepper, diced

3 tablespoons olive oil

 

The Sides:

1-pound broccolini, rough ends cut off

1 cup raw Jasmine rice, cooked to package directions

2 teaspoons sesame seeds

Instructions

To make the sauce, combine all of the ingredients in a small bowl and whisk until smooth.

To make the patties, combine the garlic, jalapeño, ginger, brown sugar, Cajun seasoning, fish sauce, lime juice, and oyster sauce in the bowl of a food processor.  Blend, pulsing until a rough paste forms.

Add the salmon and pulse 2 or 3 times until combined but salmon is still chunky.  Add the cilantro and egg and pulse until just combined and evenly distributed, pushing the sides down once to make sure everything is incorporated.

Put the salmon mixture in a small bowl and add the chopped red pepper. Stir by hand to combine.

Heat the olive oil in a large skillet over medium high heat.  For the salmon mixture into patties and add to the hot oil.  Cook for 2-3 minutes per side until golden brown.  Do not overcook.  Set aside and tent with foil to keep warm until ready to serve.

Add the broccolini to the pan drippings and cook on medium high heat for 2 minutes tossing with tongs. Drizzle 1 tablespoon of the sauce over the spears and cover the pan for 1 minute until the broccolini is crisp tender and bright green.

Serve the patties over the rice with broccolini on the side. Drizzle the sauce over the patties and rice and garnish with sesame seeds.

Also, delicious served on salad or as an appetizer.
