SUPERBLY HERBY STICKY APRICOT GLAZED CHICKEN WINGS
Ingredients
3 pounds chicken wings, cut into flats and drummies
2 tablespoons baking powder
3 tablespoons Dish off the Block Superbly Herby Spice Blend
2-3 tablespoons olive oil
1 ½ cups apricot preserves
¾ cups brown sugar
Chopped parsley for garnish (optional)
Instructions
Preheat oven to 425 degrees. Line a large rimmed baking sheet with foil and place a wire cooling rack on top. Coat the rack with non-stick spray.
Pat the wings dry all over with paper towels.
Place the baking powder and Superbly Herby spice blend in a large bowl and whisk to combine. Add the chicken wings to the bowl and toss, toss, toss, until they are fully and evenly coated with the spices. Drizzle the olive oil over the tops of the wings.
Place the wings on the wire rack with some space in between each. Place them in the preheated over for 20 minutes. Remove and flip the wings over and place them back in the oven for an additional 10-20 minutes until they are crispy and cooked through. Total cook time will depend on the size of your wings. The wings should register 165 degrees internally and the juices should run clear when pierced with the tip of a steak knife.
While the wings are cooking, make the glaze by combine the apricot preserves and brown sugar in a large saucepan. Cook over medium high heat, whisking, until the preserves are melted and a smooth sauce forms. Keep warm until you are ready to glaze the wings.
When the wings are finished cooking, use tongs to dip each in the hot glaze letting the excess drip off and place them back on the wire rack (to allow any more excess glaze to drip off). Garnish with chopped parsley and DEVOUR!!
