SPRITZ COOKIES

2 ½ cups sifted flour

½ teaspoon salt

1 cup butter, softened

1 ¼ cups sifted powdered sugar

2 egg yolks

1 teaspoon vanilla extract

½ teaspoon almond extract

Colored sugars and sprinkles

Preheat oven to 400 degrees.

Mix flour and salt in a small bowl.

In the bowl of a stand mixer, cream the butter with the powdered sugar.  Add the egg yolks, one at a time.  Add the vanilla and almost extract.  Beat until well combined.

Gradually add the dry ingredients and beat until just mixed and all of the flour is absorbed.

Put the dough into a cookie press or piping bag.

Chill a baking sheet in the freezer for 10 minutes and cover it with parchment paper.  Pipe the cookies through a star tip onto the parchment.

Decorate with colored sugar or sprinkles.

Bake for 5-7 minutes.  You do not want them browned.  Remove to wire racks for cooling.
