RAGIN’ CAJUN BLACKENED CATFISH WITH HONEY LEMON DRIZZLE

Ingredients

4 tablespoons Dish off the Block Ragin’ Cajun Spice Blend

2 tablespoons Italian breadcrumbs

2-2 ½ pounds catfish filets, skinned (about 4 large filets)

3 tablespoons olive oil

4 tablespoons cold butter, cut into pats

¼ cup honey

2 tablespoons lemon juice

2 tablespoons fresh parsley, chopped

Instructions

Combine the Ragin’ Cajun and breadcrumbs in a small bowl and mix until well combined.  Liberally rub this mixture all over the catfish filets on both sides.

Heat the olive oil in a large deep skillet over medium high heat.  Add the seasoned filets, top-side-down, to the hot oil.  Sear for 3-4 minutes on the first side until they are dark mahogany brown.  Flip and cook for 3-4 minutes on the second side until they are just cooked through and a fork slides in and out, very easily, in the center of the filets.  Remove the filets to a serving dish and tent with foil to keep warm.

Add the butter, honey, and lemon juice to the pan and whisk until a silky sauce forms.  Pour the sauce over the fish and garnish with the chopped parsley.  Serve with rice and beans, mashed potatoes, or your favorite veg!
