PEACH AND TOMATO CROSTINI WITH HOT HONEY AND BALSAMIC DRIZZLE

Ingredients

1 large French baguette, cut into ½” thick slices

½ cup olive oil

1, 16-ounce package fresh mozzarella, cut into ¼” thick slices

2 large ripe peaches, cut into thin slices

1 pint grape or cherry tomatoes, cut in half

¾ cup basil leaves

3-4 tablespoons hot honey

3-4 tablespoons balsamic glaze

Instructions

Preheat oven to 400 degrees.  Line a rimmed baking sheet with foil.

Brush each of the baguette slices on both sides with the olive oil and place them on the baking sheet.  Bake for 7-8 minutes until lightly toasted.  Place one piece of mozzarella on each slice and place them back in the oven for 3-4 minutes until the cheese is melty.

Layer the peaches and tomatoes on top of each crostini and top with basil leaves.  Place the crostinis on a serving platter and drizzle the hot honey and balsamic glaze over the tops.  Serve immediately.
