ONE PAN CREAMY BURSTED GARDEN CHERRY TOMATO PASTA

Ingredients

3 tablespoons olive oil

1 large onion, chopped

8 garlic cloves , chopped

8 cups garden cherry tomatoes

1 teaspoon salt

½ teaspoon black pepper

2 teaspoons Dish off the Block Ciao Bella Italian Spice Blend

½ cup dry white wine

½ pound dry angel hair pasta

¾ cup heavy cream

½ cup basil leaves, rough chopped (plus more for garnish)

1 cup baby spinach leaves, packed

Grated Parmesan cheese

Instructions

Heat the olive oil in a large deep skillet over medium high heat.  Add the onions and garlic and cook for 2-3 minutes until soft and fragrant.  Add the tomatoes, salt, pepper, and Italian spice blend to the pan and cook, stirring frequently, until the tomatoes start to break down, about 4-5 minutes.  Add the wine to the pan and stir to combine.

Place the dry angel hair pasta in the pan and toss it with the sauce.  Cover the pan and cook for 6 minutes, stirring every 2 minutes to keep the pasta from sticking together.  Cover and continue to cook, stirring occasionally, until pasta is al dente in texture.

Remove the cover and add the cream, basil and spinach.  Continue to cook, stirring for 2-3 minutes more, stirring, until the sauce is creamy and the spinach is wilted.

Serve the pasta immediately in bowls with parmesan on the side for sprinkling. Garnish with more fresh basil leaves.
