GROUND BEEF AND THREE PEPPER TATER TOT CASSEROLE

3 tablespoon olive oil

1 large onion, chopped into 1-2” pieces

2 green bell peppers, chopped into 1-2” pieces

1 red bell pepper, chopped into 1-2” pieces

1 orange bell pepper, chopped into 1-2” pieces

2 teaspoon salt

1 teaspoon garlic powder

2 teaspoon black pepper

1 ½ pounds ground beef (85/15)

1, 8 ounce bar cream cheese

3 cups cheddar

½ cup parmesan

1 can cream of mushroom

15 ounce bag Crispy Crowns or Tater Tots

½ cup scallions, chopped

Preheat oven to 400 degrees.

Heat the olive oil in a large skillet with sides.  Cook the onion and all of the peppers over medium high heat, stirring frequently, until soft, about 3-5 minutes.

Add the salt, garlic powder, black pepper, and ground beef to the skillet.  Continue cooking, breaking up the ground beef with a spatula and stirring frequently until the beef is cooked through.  Add the cream cheese and stir until melted.  Turn off the heat and add the cheddar cheese and cream of mushroom soup. Stir to combine.

Pour this mixture into a 9” x 13” baking dish prepared with non-stick spray. Top evenly with the tater tots or crispy crowns.

Bake for 30-40 minutes until the tater tots are crispy.  Garnish with scallions and devour.
