1 cup butter, softened to room temperature
¾ cup brown sugar, packed
¾ cup white sugar
1 tablespoon pure vanilla extract
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups quick oats
¾ cups chopped pecans
¾ cup sweetened coconut flakes
1 cup semi-sweet chocolate morsels
Preheat oven to 350 degrees.
Cream the butter and both sugars in the bowl of a stand mixture. Add the eggs one at a time and then the vanilla.
Combine the flour, baking powder, baking soda, salt, and oats in a separate bowl. Gradually add this mixture to the stand mixture until well combined.
Add the pecans, coconut, and chocolate chips to the bowl and mix until they are evenly distributed throughout the dough.
Drop the batter by heaping tablespoons on to a non-stick cookie sheet. Bake for 12-14 minutes until lightly browned.
