COPY CAT KFC COLE SLAW
8 cups coleslaw mix
2 tablespoons onion, grated (or finely processed in food processor)
⅓ cup sugar
½ teaspoon salt
⅛ teaspoon white pepper
¼ cup light cream
¼ cup buttermilk
½ cup Hellmann’s Light mayo
2 tablespoons apple cider vinegar
2 tablespoons lemon juice
Place the shredded coleslaw mix in the bowl of a food processor, in 2 cup batches, and pulse a few times until slaw is finely chopped (not pulverized, just finely chopped). Place it in a large bowl with the onion.
Combine the sugar, salt, pepper, cream, buttermilk, mayo, vinegar, and lemon juice in a small bowl and whisk to combine until smooth and sugar is dissolved.
Pour this mixture into the bowl with the slaw and mix to combine. Cover with plastic wrap and refrigerate overnight. Overnight is KEY as the longer it sits the better and the more it tastes like that KFC classic.
