CIAO BELLA KIELBASA, PEPPERS, AND ZUCCHINI STIR FRY
3 tablespoons olive oil
1 large onion, cut into ½” thick wedges
1 green bell pepper, cut into ½” thick wedges
1 red bell pepper, cut into ½” thick wedges
1 yellow bell pepper, cut into ½” thick wedges
1 pound zucchini, cut into ½” thick slices about the same size/length as the peppers
1 pound kielbasa, cut into ½” thick rounds
2 teaspoons Dijon mustard
1 tablespoon honey
2 teaspoons Dish off the Block Ciao Bella Italian Spice Blend
1 teaspoon salt
½ teaspoon black pepper
¼ cup dry white wine
½ cup mozzarella cheese
3 cups cooked rice
Heat the olive oil in a large deep skillet over medium high heat. Add the onions, garlic, and peppers to the pan and cook, stirring frequently for 3-4 minutes until the peppers begin to get soft.
Add the zucchini, kielbasa, mustard, honey, Italian seasoning, salt, black pepper, and wine to the pan and cook for 8-10 minutes more, stirring and tossing frequently, until the peppers and zucchini are very soft and the kielbasa is lightly browned.
Just before serving toss in the mozzarella cheese until just melted.
Serve immediately over rice and devour!!
