CHEESY ZUCCHINI TOTS

Ingredients

1 ½ packed cups zucchini, grated and squeezed dry in a clean dish towel

2 large eggs

½ cup Boursin garlic and herb soft cheese, crumbled

½ cup cheddar jack cheese, grated

¼ cup grated parmesan cheese

½ cup seasoned Italian breadcrumbs

½ teaspoon salt

Instructions

Preheat oven to 375 degrees.  Prepare a mini muffin tin with non-stick spray.

Mix all of the ingredients together in a large bowl until well combined.  Press the mixture into the muffin cups and flatten with your fingers so the filling is compact and is even with the top rim of each cup.

Bake for 15-17 minutes until lightly puffed and golden brown.  Serve hot with horseradish sauce, Ranch dressing, or ketchup for dipping.

Makes 15- 20 tots depending on the size of your muffin tins.
