4th OF JULY BERRIES AND FETA SALAD WITH POPPY SEED DRESSING

Ingredients

The Salad:

5 ounces baby arugula and spinach (or your favorite mixed greens)

1 pint blueberries

1 quart strawberries, sliced

8 ounce block of feta cheese, crumbled

 

The Dressing:

¼ cup milk

½ cup mayonnaise

⅓ cup sugar

2 teaspoons poppy seeds

2 teaspoons cider vinegar

 

Instructions

Spread the greens in an even layer on a large rectangular or square platter. Place the blueberries over the in the upper left hand corner and layer the strawberries and feta in stripes to mimic the American flag.

Combine the remaining ingredients in a large jar and shake vigorously until well combined.

Just before serving, drizzle the dressing over the salad and serve more on the side.
