LEEK AND PEA RICE
4 Tbs. butter
1 sweet onion, chopped
1 leek, chopped (white and light green parts)
5 large garlic cloves, chopped
3 cups cooked rice (1 cup raw rice cooked to package directions)
1 cup frozen peas, thawed
2 tsp. salt
1 tsp. black pepper
2 Tbs. parmesan cheese
Melt the butter in a large skillet over medium high heat. Add the onion, leeks, and garlic. Sauté over medium heat until onions and leeks are very soft and fragrant. Add rice, peas, salt, pepper, and parmesan cheese and cook for 2 more minutes until well combined.
