LEEK AND PEA RICE

 

4 Tbs. butter

1 sweet onion, chopped

1 leek, chopped (white and light green parts)

5 large garlic cloves, chopped

3 cups cooked rice (1 cup raw rice cooked to package directions)

1 cup frozen peas, thawed

2 tsp. salt

1 tsp. black pepper

2 Tbs. parmesan cheese

 

Melt the butter in a large skillet over medium high heat.  Add the onion, leeks, and garlic.  Saut√© over medium heat until onions and leeks are very soft and fragrant.  Add rice, peas, salt, pepper, and parmesan cheese and cook for 2 more minutes until well combined.
