NECTARINE AND TOMATO SALSA
2 large ripe nectarines, pitted and chopped
2 cups cherry or grape tomatoes, cut into quarters
1 cup red onion, diced
1 jalapeno pepper, chopped
½ cup cilantro, chopped
2 tablespoons olive oil
¼ cup fresh-squeezed lime juice
1 tablespoon sugar
1 tablespoon honey
1 teaspoon cumin
1 teaspoon salt
Combine all of the salsa ingredients in a large bowl and let sit at least 1 hour in advance of mealtime so the flavors can marry. Stir occasionally so everything marinates evenly. If the nectarines are not very sweet, add an additional tablespoon of sugar or honey.
Serve with chips or delicious over fish, chicken, pork, an old boot, etc….!
