LOADED OATMEAL AND CRANBERRY COOKIES

Ingredients

2 sticks butter, softened to room temperature

½ cup sugar

1 cup brown sugar, packed

2 eggs

2 teaspoons vanilla

1 ½ cups flour

1 teaspoon salt

1 teaspoon cinnamon

1 teaspoon baking soda

3 cups quick oats

1 cup walnuts, finely chopped

¾ cup white chocolate chips

¾ cup semi-sweet chocolate chips

1 cup fresh cranberries, cut in half

Instructions

Preheat oven to 350 degrees.

Combine the butter, sugar, and brown sugar in the bowl of a stand mixer and mix with the paddle attachment until creamy.  Add the eggs and vanilla to the bowl and mix until well combined, scraping down the sides of the bowl as needed.

Combine the flour, salt, cinnamon, and baking soda in a separate bowl and whisk to combine.  Gradually add the flour mixture to the stand mixer until combined.  Add the oats and nuts to the bowl and mix until fully incorporated.  Add the white and dark chocolate chips and the cranberries to the bowl and mix just until everything is evenly incorporated.

Drop the dough by heaping tablespoons onto ungreased cookie sheets.  Bake for 12-14 minutes until lightly browned and set in the center.

Makes about 3 dozen cookies.
