JUMBO GINGER SHITAKE WONTON TURNOVERS
2 tablespoons olive oil
1 leek, white and light green parts chopped (about 1 ½ cups)
3 cloves garlic, chopped
2 tablespoons fresh ginger root, minced fine
¾ pound shitake mushrooms, stems discarded and caps sliced
1 ½ tablespoons soy sauce
2 tablespoons wasabi cream paste
½ cup heavy cream
2 cups baby spinach leaves, packed
2 cups Gruyere cheese, shredded
8 Twin Dragon Egg Roll Wrappers*
1 egg, beaten
2 tablespoons black and white sesame seeds
2 scallions, chopped
Heat the olive oil in a large deep skillet over medium high heat. Cook the leeks, garlic, and ginger until fragrant, about 3 minutes, stirring frequently. Add the mushrooms to the pan and cook until all moisture is gone from the pan and the mushrooms are lightly browned.
Add the soy sauce, wasabi, and heavy cream to the pan and cook for 2 minutes until a thick sauce forms, about 2 minutes. Add the spinach to the pan and cook stirring until wilted. Turn off the heat and let the filling cool to room temperature.
Preheat the oven to 400 degrees.
When the filling is cool, stir in the cheese.
Place the egg roll wrappers on the counter and divide the cheesy filling evenly between all of the wrappers, placing a mound in the center.
Brush the edges of each wrapper with the egg wash and fold the wrapper over the filling, corner to corner, and press the edges to tightly seal.
Place the turnovers on a foil-lined baking sheet that has been prepared with non-stick spray.
Brush the egg wash all over the tops of the turnovers. Sprinkle liberally with the sesame seeds.
Bake for 7-8 minutes until golden brown. Garnish with scallions.
