DECADENT TURNIPS AU GRATIN

Ingredients

2 pounds turnips, sliced very thin on a mandoline

1 teaspoon salt

½ teaspoon black pepper

2 cups Jarlsberg or gruyere cheese, shredded

1 tablespoon fresh thyme leaves, stemmed

2 cups heavy cream

¼ cup grated parmesan cheese

Instructions

Preheat oven to 375 degrees and generously coat a 11” x 7” or similar size baking dish with softened butter.

Layer ⅓ of the sliced turnips in an even layer, overlapping, on the bottom of the baking dish.  Season with ⅓ each of the salt and pepper and top with ⅓ of the shredded cheese and ⅓ of the thyme leaves.  Pour about ⅓ of the heavy cream evenly over the top.

Repeat these layers 2 more times and sprinkle the parmesan cheese over the top.

Cover the casserole tightly with foil and bake for 40 minutes.  Remove the foil and bake for 20-30 minutes more until the turnips are very tender when pierced with a fork and the casserole is browned on top and bubbly.Let the casserole sit for 15-20 minutes to set before cutting.  Garnish with thyme sprigs.
