BAKED STICKY RHUBARB PUDDING
Ingredients
3 cups fresh rhubarb stalks, diced
1 cup flour
⅔ cup sugar
1 teaspoon baking powder
¼ teaspoon salt
⅓ cup milk
⅔ cup butter, melted
½ teaspoon pure vanilla extract
1 cup powdered sugar
1 tablespoon cornstarch
1 cup water
⅔ cup butter, melted
Instructions
Preheat oven to 350 degrees. Coat a 9” x 9” baking dish with non-stick spray.
Spread the rhubarb in the bottom of the prepared baking dish.
In a medium bowl, combine the flour, sugar, baking powder, salt, milk, melted butter, and vanilla. Stir until smooth. Pour this mixture over the rhubarb and spread it evenly over the top.
In another bowl, combine the powdered sugar and cornstarch and whisk to combine. Sprinkle this mixture evenly over the top of the batter in the baking dish. Pour the water evenly over the top.
Bake for 1 hour. Remove from oven and let cool. For 30 minutes or longer.
Serve topped with whipped cream or ice cream!
