THE BEST PANCAKES

 

2 cups flour

2 Tbs. sugar

¼ tsp. cinnamon

½ tsp. salt

1 tsp. baking soda

2 tsp. baking powder

2 eggs

1 cup plain yogurt

1 ¼ cups milk

3 Tbs. vegetable oil

 

Combine the dry ingredients in a large bowl and whisk to combine.  

 

Combine the eggs, yogurt, and milk in another bowl and whisk until smooth, then whisk in the oil until well combined.

 

Gradually add the wet ingredients to the dry until just combined.  There will be some lumps which is fine. Fold in fruit or chocolate chips if desired.

 

Heat a large skillet over medium heat and reduce to medium low just before cooking.  Drop ladles full of batter onto the pan.  Flip when bubbles form on the top.  Cook for 1-2 minutes on the other side until golden and cooked through. 

 

Serve hot with butter and syrup!
