THE BEST PANCAKES
2 cups flour
2 tablespoons sugar
¼ teaspoon nutmeg
½ teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1 cup plain or vanilla yogurt
1 ¼ cups milk
4 tablespoons vegetable oil
Combine the dry ingredients in a large bowl and whisk to combine.
Combine the eggs, yogurt, and milk in another bowl and whisk until smooth, then whisk in the oil until well combined.
Gradually add the wet ingredients to the dry until just combined. There will be some lumps which is fine. Fold in berries or chocolate chips if desired.
Heat a large skillet over medium heat and reduce to medium low just before cooking. Drop ladles full of batter onto the pan and spread them out slightly with the bottom of the ladel so the batter is an even ½” thickness. Flip when bubbles form on the top of the batter. Cook for 2-3 minutes on the other side until golden and cooked through in the center.
Serve hot with butter and syrup!
