SNICKERDOODLES

 

1 cup butter, softened

1 ½ cups sugar

2 eggs

1 tsp. vanilla

1 ¾ cups flour

2 tsp. cream of tartar

1 tsp. baking soda

½ tsp. salt

3 Tbs. sugar

1 Tbs. cinnamon

 

Preheat oven to 350 degrees.

 

Cream the butter with sugar in the bowl of a stand mixer until combined.  Add eggs, one at a time, until incorporated.  Add vanilla and beat until smooth.

 

In a separate bowl, combine the flour, cream of tartar, baking soda, and salt.  With mixer on low, slowly add the dry ingredients to the wet until fully incorporated.

 

Mix the 3 Tbs. of sugar and 1 Tbs. cinnamon in a small bowl.  

 

Roll the dough into 1-1 ½” balls and then roll to coat in the cinnamon mixture.  Place 3” apart on cookie sheets and bake for 10 minutes until puffed and golden.  Do not overcook.

 

Cool on wire racks for 15 minutes.
