PIER 4 POPOVERS

 

1 cup flour

1/4 tsp. salt

3 large eggs

1 cup milk

1 Tbs. melted butter (unsalted is preferred)

2 Tbs. butter, cut into 6 even pieces

non-stick cooking spray

 

 

Spray your popover pan with non-stick cooking spray.  Preheat oven to 425° and set your pan in the middle of the oven. 

 

Place the first five ingredients in your blender and mix until the batter reaches the consistency of heavy cream, about 1-2 minutes.

 

Remove the pan from the oven after heating it for about 2 minutes.  Place one of the small pieces of butter in each cup and place the pan back in the oven until bubbly, about 1 minute until butter is melted and bubbly.

 

Remove from the oven again and fill each cup half way with batter and bake for 20 minutes, still at 425°.  Reduce temperature to 325° and bake for 15 minutes more or until brown and puffy.

 

Makes 6 popovers that will really impress your guests!
