PEANUT BUTTER CHOCOLATE CHIP COOKIES
1 cup shortening
1 cup butter, softened
1 cup peanut butter
1 cup white sugar
1 cup brown sugar, packed
1 tsp. vanilla
2 large eggs
2 cups flour
1 tsp. salt
1 tsp. baking soda
2 cups semi-sweet chocolate chips
Preheat oven to 350 degrees
Cream the shortening, butter, and peanut butter with both sugars in the bowl of a stand mixer until smooth. Add the vanilla and the eggs, one at a time, on medium speed until fully incorporated.
Combine the flour, salt, and baking soda in a separate bowl and slowly add to the wet ingredients on slow speed until full combined. Stir in the chocolate chips by hand.
Drop by rounded teaspoons onto a non-stick cookie sheet.
Bake for 12-14 minutes until golden brown on the edges and lightly brown in the center. Let cool for 10 minutes on cookie sheets before moving to cooling racks.
