HEIRLOOM TOMATO AND CUCUMBER SALAD WITH MAPLE BALSAMIC VINIAGRETTE

Ingredients

1 pint red cherry or grape tomatoes, cut in half

1 pint yellow cherry tomatoes, cut in half

1 large English cucumber, peeled and chopped

1 large orange pepper, chopped

1 cup fresh basil leaves, julienned

1 block Feta cheese, crumbled

1 teaspoon salt

1 teaspoon black pepper

 

Dressing:

¼ cup olive oil

¼ cup balsamic vinegar

¼ cup maple syrup

Instructions

Mix the salad ingredients in a large bowl.  Put dressing ingredients into a small jar and shake until emulsified. Pour dressing over salad and toss.
