CONGO BARS

Ingredients

⅔ cup butter, melted

1, 1 pound box light brown sugar (2 ⅓ cups, packed)

3 eggs

2 ¾ cups flour

2 ½ teaspoon baking powder

½ teaspoon salt

1, 12 ounce bag semi-sweet chocolate chunks or chips

1 cup walnuts (optional)

Instructions

Preheat oven 350 degrees.

In a large bowl combine butter and sugar.  Beat in the eggs.

Combine the flour, baking powder, and salt in a separate bowl.  Add the dry ingredients to the  wet and mix thoroughly.  Add the chocolate chunks and nuts (if desired).

Prepare a 9” x 13” baking dish with non-stick spray.  Spread the batter evenly in the dish and bake for 30-35 minutes until tester just comes out clean.

Let cool completely.  Cut into squares, hide 2 for yourself, and let your family devour them!!

This recipe is an old favorite from the church cookbook when I was growing up (still one of my favorite cookbooks).  My sister-in-law has become the Congo Queen, making these often for family gatherings!
