GUACAMOLE & PINEAPPLE SALSA

Ingredients

Guacamole:

3 large ripe avocados, peeled and pitted

¼ cup red onion, finely chopped plus 1 tablespoon for garnish

2 garlic cloves, minced

½ teaspoon salt

¼ teaspoon black pepper

1 lime, juiced (2 tablespoon juice)

 

Pineapple Salsa:

1 pint grape or cherry tomatoes, cut into quarters

1 ½ cups pineapple, chopped

1 small onion, finely chopped

1 jalapeño, minced

⅓ cup fresh cilantro leaves, packed and rough chopped

½ teaspoon salt

1 teaspoon cumin

1 tablespoon sugar

¼ cup olive oil

2 tablespoons lime fresh squeezed lime juice

Instructions

To make the guacamole, place all of the ingredients together in a small bowl and mash the avocados with a fork until almost smooth, but with some small lumps or desired texture.

Garnish with more red onion and serve with chips.

To make the salsa, combine all of the ingredients in a small bowl and mix to combine.  Let sit for 30 minutes to allow flavors to meld.

Serve with chips.
