MELTING GREEK LEMON POTATOES
Ingredients
1 ½ cups chicken stock (or vegetable)
½ cup olive oil
⅓ cup fresh squeezed lemon juice
1 tablespoon Dish off the Block Ciao Bella Italian Spice Blend
2 teaspoons salt
3 pounds potatoes, peeled and cut into 2” wedges
6 large cloves garlic, chopped
1 tablespoon fresh parsley, chopped
Lemon slices for garnish
Instructions
Preheat oven to 400 degrees.
Combine the chicken stock, olive oil, lemon juice, Italian seasoning, and salt in a 9” x 13” baking dish and whisk to combine.
Place the potatoes in the dish and spread them into an even single layer so that they are all mostly covered in the liquid. Bake for 20 minutes and remove from the oven. Turn them over with tongs and place them back in the oven for another 30 minutes. Turn the potatoes over again and return to the oven for an additional 20-30 minutes until they are golden brown on the tops and most of the liquid has been absorbed into the potatoes.
Remove from the oven and let them rest for 10 minutes. Garnish with parsley and lemon slices.
