PASTA WITH SAUSAGE, BROCCOLI RABE, AND WILD MIUSHROOM CREAM SAUCE
Ingredients
3 tablespoons olive oil
19 ounces bulk sweet Italian sausage (or links with the casings removed)
1 large onion, chopped
8 large garlic cloves, chopped
2 bunches broccoli rabe (about 12-15 ounces), florets cut off stems and stems cut into ½” pieces
8 ounces mixed wild mushrooms, rough chopped
2 teaspoons Dish off the Block Ciao Bella Italian Spice Blend
1 teaspoon salt
1 teaspoon black pepper
½ cup dry white wine
1 quart heavy whipping cream
1 pound dry pasta, cooked al dente to package directions in salted water (I used ‘mafaldine’ shape here, but your favorite shape will work)
5 ounces baby spinach leaves
¼ cup grated parmesan cheese
Instructions
Heat the olive oil in a large deep skillet over medium high heat. Add the sausage to the pan and cook, breaking it up into small pieces with a spatula or wooden spoon. When the sausage is most cooked through, add the onions and garlic to the pan. Cook for 2-3 minutes more until the onions begin to soften.
Add the broccoli rabe stems to the pan with the mushrooms, Ciao Bella Italian seasoning, salt, and black pepper to the pan. Cook for 3-4 minutes, stirring frequently, until the mushrooms release their juices and the sausage begins to lightly brown.
Add the wine to the pan and cook, stirring for 2 minutes, until it is mostly absorbed. Add the heavy cream to the pan and bring the sauce to a boil. Reduce to a low boil and let the sauce bubble away and reduce while you cook the pasta, about 10-12 minutes. Add the broccoli rabe florets after the sauce has bubbled away for about 5 minutes and toss in the sauce (they cook relatively quick, so you want to add them towards the end).
Using tongs or a spider, transfer the al dente pasta directly from the pasta pot into the sauce. It is no problem if some of the pasta water gets in the sauce – it will help to make it creamy and coat the pasta.
Add the spinach and the parmesan cheese and toss, toss, toss until everything is well coated in the sauce and then toss again!!
Serve in bowls with more parm on the side for sprinkling. DEVOUR!!
