CHEESY PROTEIN EGG BAKE WITH SPINACH AND PEPPERS
Ingredients
10 large eggs
2, 16 ounce packages whole milk cottage cheese
1 pound Jarlsberg cheese, shredded (or your favorite type)
1, 10 ounce package frozen spinach, thawed and squeezed dry
1, 4 ounce can chopped green chilies
1 red bell pepper, chopped (about 1 cup)
4 scallions, chopped (about ¾ cup)
½ cup butter melted
½ cup flour
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon baking powder
Instructions
Coat a 9” x 13” baking dish with non-stick spray.
Beat the eggs in a large bowl. Add the cottage cheese, shredded cheese, spinach, green chilies, chopped red pepper, scallions, butter, flour, salt, black pepper, and baking powder to the bowl. Mix until everything is well combined.
Pour the mixture into the prepared baking dish and cover the dish with plastic wrap. Refrigerate overnight.
Remove the casserole from the fridge 30 minutes before baking. Preheat oven to 400 degrees.
Remove the plastic wrap and place the casserole in the oven. Bake for 15 minutes and then reduce the temperature to 350 degrees. Bake for an additional 25-35 minutes until a knife inserted in the center comes out clean. Let rest for 15 minutes.
Garnisih with scallions and cut the casserole into squares. DEVOUR!
