WILD RICE AND MUSHROOM PILAF

Ingredients

3 tablespoons olive oil

3 tablespoons butter

1 large onion, chopped

6 garlic cloves, chopped

1 ½ pounds mixed mushrooms, sliced (cremini, shitake, oyster, etc…)

3 cups cooked wild rice, cooked to package directions

1 cup cooked orzo pasta, cooked to al dente per package directions

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon Dish off the Block Ciao Bella Italian Spice Blend

2 teaspoons truffle zest (such as Sabatino)

¼ cup fresh parsley leaves, chopped (plus more for garnish)

Instructions

Heat the olive oil and butter in a large deep skillet or wok over medium high heat.  Add the onions, garlic, and mushrooms.  Cook, stirring frequently, for 8-10 minutes until the mushrooms begin to lightly brown and most of the moisture from the mushrooms is absorbed.

Add the rice, orzo, salt, pepper, Italian seasoning, truffle zest, and parsley to the pan and cook, stirring frequently for another 3-4 minutes until everything is well combined.

Keep warm until ready to serve.
