OATMEAL RAISIN COOKIES
2 cups salted butter, softened
2 cups sugar
1 cup brown sugar, packed
2 teaspoons vanilla
2 large eggs
3 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups rolled oats
2 cups raisins
2 cups pecan halves, rough chopped
Preheat oven to 350°. Grease cookie sheets.
In a large bowl, cream together butter, sugars, and vanilla until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Combine flour, baking soda, and cinnamon in a separate bowl. Then, gradually stir into the creamed mixture.
Fold in oats, raisins, and pecans.
Drop rounded spoonfuls onto prepared cookie sheets. Bake for 15-18 minutes.
Cool on wire rack. Makes approx. 36 cookies.
