DEATH BY CHOCOLATE CAKE WITH CHOCOLATE THREAT FROSTING (AKA LAURA’S BIRTHDAY CAKE)
1 dark chocolate cake mix
1, 3 ¼ ounce package of instant vanilla pudding
1 pint sour cream
1, 12 ounce package of semi-sweet chocolate morsels
¼ cup oil
½ cup Kahlua
½ cup butter, melted
⅔ cup powdered cocoa
3-4 cups powdered sugar
⅓-½ cup milk
1 tablespoon vanilla extract
Mix all cake ingredients by hand until well combined and pour half of batter into each of 2 greased and floured 8” cake pans. Bake at 350° for 45-55 minutes or until testers come out clean. Let cool completely.
Combine the butter, cocoa, 3 cups powdered sugar, and vanilla in a large bowl. Using an electric mixer on low speed combine ingredients while slowly adding the milk. Add more sugar or milk as needed to reach a spreadable consistency.
Remove the cakes from pans and place a dollop of frosting on a cake plate (this will act as glue to hold the cake in place). Put one cake in the center of the cake plate (on top of the frosting dollop) and top it with a 1” layer of frosting and, then, top with the other cake. Liberally frost the top and sides of the cake until well covered and smooth. Decorate as you wish!
