GET FUNKY GORGONZOLA, CORN, AND BACON DIP WITH SWEET MANGO PINEAPPLE SALSA POP

I was chosen as 1 of 30 bloggers to compete in the Sam’s Fresh Salsa Blogger Recipe Challenge!  I received samples of their mild, medium, and mango pineapple salsas to use in developing creative recipes for appetizers and entrees. The challenge is to really think outside of the box and leave the ‘same ole same ole’ chips and salsa in the dust!!

Let’s get funky!! I absolutely love chips and dip for game day, holiday, or any day for that matter!! I tasted the Sam’s Mango Pineapple Fresh Salsa and started to think about what flavors would really highlight the sweet and slightly spicy salsa.  Gorgonzola and bacon!!  This dip brings on the funk in every bite, the bacon is salty, the corn gives great texture and adds to the sweet pop from the salsa which is woven throughout the dip and dancing beautifully on top. This dip elevates and compliments everything that is so delicious about this Sam’s Mango Pineapple Fresh Salsa!

Preheat oven to 350 degrees.  Coat a pie plate or 2 quart baking dish with non-stick spray.

Combine 8 ounces of softened cream cheese, ½ cup sour cream, ½ cup gorgonzola crumbles, 12 ounce bag thawed frozen corn, 6 sliced chopped cooked bacon, ½ teaspoon salt, ½ teaspoon black pepper, and 1 cup of Sam’s Mango Pineapple Fresh Salsa in a large bowl.  Spread it evenly in the baking dish.

Top it evenly with an additional ½ cup of the salsa. Bake for 30 minutes until hot and bubbly.  Sprinkle the cilantro leaves over the top of the dip and serve with tortilla or pita chips.  Take a dip!!

½ cup sour cream

½ cup gorgonzola crumbles

1, 12 ounce bag frozen corn, thawed

6 slices of bacon, cooked crisp and chopped

½ teaspoon salt

½ teaspoon black pepper

1 12 ounce container Sam’s Mango Pineapple Fresh Salsa, divided

2 tablespoons cilantro leaves, chopped

Tortilla chips

 

Preheat oven to 350 degrees.  Coat a pie plate or 2 quart baking dish with non-stick spray.

Bake for 30 minutes until hot and bubbly.  Sprinkle the cilantro leaves over the top of the dip and serve with tortilla or pita chips.
