Cheesy Salsa Pinwheel Puffs

I was chosen as 1 of 30 bloggers to compete in the Sam’s Fresh Salsa Blogger Recipe Challenge!  I received samples of their mild, medium, and mango pineapple salsas to use in developing creative recipes for appetizers and entrees. The challenge is to really think outside of the box and leave the ‘same ole same ole’ chips and salsa in the dust!!

When I started this challenge, ideas flooded my brain on creative ways to use each of these yummy salsas.  I wanted to highlight the fresh flavors in each salsa and decided to make an appetizer with minimal ingredients but maximum flavor.  I used the Mild flavor salsa in this recipe, but really, any of them would be delicious here!

My Cheesy Salsa Pinwheel Puffs have only  6 ingredients and are super easy to make — BUT you would never know it!!  These impressive-looking cheesy wonders are the perfect game day or party bites!!  And, they can even be made in advance and frozen for an easy go-to appetizer if surprise guests pop-in unannounced!

The Ingredients:

1 sheet frozen puff pastry dough, thawed

1, 5 ounce package Boursin Garlic and Herb Soft Cheese, softened to room temperature

1, 4 ounce package prosciutto, thinly sliced

1 cup Sam’s Fresh Mild Salsa, drained in a mesh sieve

1 ½ cups shredded cheddar cheese

1 egg yolk

1 teaspoon water

Preheat oven to 400 degrees.  Line a large baking sheet with parchment paper.

Lightly flour your countertop and roll the puff pastry dough into a rectangle, approximately 14” x 10”.  Crumble the soft herb cheese over the pastry and then, using an offset or rubber spatula, spread it evenly to cover the dough (to the edges).

Lay the prosciutto slices evenly over the top of the herb cheese.  Sprinkle the salsa evenly over the prosciutto and top with the shredded cheddar cheese.

Starting at the long end, tightly roll the dough into a log, jelly-roll style, pushing in any ingredients that pop out of the ends back inside the roll.  Pinch the seam together at the end of the roll and place the roll, seam-side-down on the countertop.

Using a serrated steak knife, cut the roll cross-wise into ¾-1” rounds.  Use a sawing motion as you cut to keep the rounds intact as you cut through.  Place the rounds, cut-side-up, on the baking sheet.

Combine the yolk and water in a small bowl and beat until smooth with a fork.  Brush the egg wash all over the tops and sides of the pinwheels.

Bake for 14-15 minutes until golden brown and puffed. Let cool to set for 10 minutes.  Garnish with chopped parsley and serve.
