ZUCCHINI BREAD

3 1/4 cups all-purpose flour

1 1/2 teaspoons salt

2 teaspoons baking soda

1 heaping teaspoon ground cinnamon

2 cups grated zucchini

3 cups sugar

1 cup vegetable oil

4 eggs, beaten

1/3 cup zucchini juice, reserved

1 cup chopped walnuts or pecans (optional)

Preheat oven to 350°F.

Combine flour, salt, baking soda, and cinnamon in large bowl.

Grate one large zucchini in a food processor or on a box grater.  Drain in a colander over a bowl, pressing with paper towels to release most of the juice.  Reserve 1/3 cup of the juice.

In a separate bowl combine sugar, oil, eggs, water, grated zucchini, and zucchini juice.

Mix wet ingredients into dry.

Fold in nuts if desired.

Bake in 2 standard loaf pans for 1 hour, until tester comes out clean.
