OATMEAL FUDGE BARS
1 cup butter, softened
2 cups brown sugar
2 eggs
3 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. salt
3 cups quick oats
1 can sweetened condensed milk
2 Tbs. butter or margarine
1, 12 oz. package of semi-sweet chocolate chips
1 cup finely chopped nuts (optional)
2 tsp. vanilla
Cream butter and sugar. Mix in eggs and vanilla until thoroughly blended.
Mix dry ingredients in a separate bowl and then add to the creamed mixture. Set aside.
In another bowl combine the second grouping of ingredients (except nuts if you are using them). Microwave for 2 minutes until chips are melted and when stirred the mixture is smooth and fudgy. Mix in nuts if using.
Spread 2/3 of the oatmeal mixture in the bottom of a greased 9" x 13" pan. Cover evenly with the fudge mix. Dot with remaining oatmeal mixture in clumps.
Bake at 350° for 40-50 minutes, until top is nicely browned and bottom crust is cooked through. Let cool for 30 minutes. Cut into bars and devour with a cold glass of milk.
