CHICKEN WALDORF SALAD

 

3 cups apples, cored and chopped into 1” chunks (I like a combo of Honey Crisp and Granny Smith, but any firm apples will work)

1 cup seedless grapes, cut in half

1 cup celery, chopped

2 packed cups chicken breast, cooked and shredded

1 cup walnuts, rough chopped and lightly toasted

1 cup Hellmann’s Light mayonnaise

1 tsp. salt

1 tsp. black pepper

1 Tbs. brown sugar

2 Tbs. lemon juice

 

Combine all of the ingredients together in a large bowl and mix thoroughly.  Let sit for a couple of hours before serving and toss again just before you are ready to serve.

 

This recipe also doubles beautifully for a buffet or brunch!
