HERB-A-LICIOUS JASMINE RICE

Ingredients

1 cup raw jasmine rice

1 ½ cups water

1 teaspoon salt

¼ cup cilantro, finely chopped

¼ cup parsley, finely chopped

¼ cup basil, finely chopped

¼ cup mint , finely chopped

2 tablespoons lime juice

2 tablespoons butter (olive oil if vegan)

Instructions

Combine the rice, water, and salt in a medium saucepan.  Bring to a boil and then cover and reduce heat to low.  Cook for 15 minutes until all of the moisture is absorbed.  Remove from heat and let sit for 10 minutes.

Add the chopped herbs, lime juice, and butter to the rice and toss to combine until the butter is melted.
