SUPERBLY HERBY CATFISH WITH HONEY DIJON VINAIGRETTE DRIZZLE
Ingredients
The Fish:
2 pounds catfish filets
1 lemon, juiced (about 3 tablespoons juice)
2 tablespoons soy sauce
½ cup flour
2 tablespoons Dish off the Block Superbly Herby Spice Blend
1 tablespoon Dish off the Block Ciao Bella Italian Spice Blend
3-4 tablespoons olive oil
The Vinaigrette:
3 tablespoons olive oil
3 tablespoons rice wine vinegar
1 tablespoon Dijon
1 ½ tablespoons honey
Instructions
Place the fish filets in a shallow baking dish. Whisk together the lemon juice and soy and pour over the fish turning to coat. Let marinade at room temperature for 30 minutes while you prepare the herb topping and vinaigrette.
Whisk the flour, Superbly Herby, and Ciao Bella Italian seasoning together in another shallow dish until well combined.
To make the vinaigrette, whisk together the olive oil, vinegar, Dijon, and honey in a small bowl and set aside.
Heat the olive oil in a large deep skillet. Take the filets out of the marinade and let any excess moisture run off. Dip the filets in the flour-herb mixture and press to coat on both sides. Place the coated filets in the hot oil and sear until browned on both sides, about 4-5 minutes per side. They are perfect when a fork easily slides in and out of the center of the filets. When they are fully cooked, drizzle about half of the vinaigrette over the tops of the filets. Catfish is very forgiving and hard to overcook, so you got this!!
Serve over rice, mashed potatoes, couscous (pictured here) or your favorite side to soak up that extra vinagrette along with your favorite veg or salad. Drizzle with more of the vinaigrette as desired. DEVOUR!!
